If you’re intent on using fresh peaches for this recipe, but they’re too tough, here’s a trick: pre-bake them for a few minutes to soften them. Do not overmix the batter! Otherwise your cobbler wouldn’t be as fluffy. Check the oven at the 25-minute mark. By that time, the cobbler should be forming a nice sauce. If not, you may have used dry peaches. But that’s okay, you can still fix it! Just add two tablespoons of melted butter over the peaches and it will help them release their sweet juice. Canned peaches are already sweetened by its syrup.
