They’re dairy-free, wonderfully moist, and pretty nutritious too. Of course, some muffin recipes are more like unfrosted cupcakes, full of sugar, dairy, and all kinds of unhealthy extras. But these vegan muffins almost all fall on the “healthy” side of the spectrum. And just because they’re “healthy” doesn’t mean they aren’t incredible. Vegan or not, these babies are sure to satisfy! Plus, they’ll keep you full all the way until lunch.

These soft, fluffy muffins have a mouthful of tangy blueberries in every bite. They’re sweet and moist, and frankly, they don’t taste “vegan” at all. There’s also a zesty kick of lemon to make them even better. Unless you tell people, most won’t realize these are vegan-friendly.

You won’t have any of these bad boys left. So if you want a few extras just for you, you’d better sneak them out beforehand – or make double to begin with!
